Pizza and focaccia dough with hemp seed flour

We have prepared this dough for pizzas and “schiacciate” with wholemeal hemp seed flourVia dei Ciliegi ” which you can find on sale in our shop.


Hemp seed flour is obtained by cold maceration of the seeds. It is normally used at 10-20% of the total dough (in our recipe we used 70 g, 10% of the total).
It is characterized by precious properties:
- rich in fibre, mineral salts and vitamins
- rich in Omega3, Omega6 fatty acids, and all essential amino acids
- naturally gluten free
Furthermore, hemp seed flour makes the dough highly digestible, crunchy and fragrant.


With our dough we have created, among others, a seasonal focaccia/pizza with organic yellow courgette flowers km0 and provola cheese aged in a cave ( see example photo above ).

Ingredients for 4 pizzas/focaccias

700 g Tuscan soft wheat semolina flour type 0 Molino Borgioli
70 gr hemp seed flour Az. Agr. Via dei Ciliegi (Ar)
350 ml of water
2 teaspoons salt
1 teaspoon sugar
1 tablespoon EVO oil
3.5 g dry yeast for pizzas

Filling as desired, in our recipe:
qb Organic yellow courgette flowers Km0
qb Provola aged in cave

Preparation

To prepare the dough we used a food mixer, but a bread machine with the “dough” function will also work.
Once the dough was ready, we moved it to a wooden cutting board to work it by hand, giving it the shape of a loaf.
Next we prepared a bowl and after a light dusting of flour, we placed our dough in it.
Once the bowl was hermetically sealed, we placed it in the traditional oven and set the leavening option for the necessary time.
Once the dough had risen, it was taken and spread out on a specially floured wooden cutting board (if the dough was sticky, proceed with a new manual process).
At this point we divided the dough into four mini loaves and prepared our baking trays where we rolled out the pizzas and focaccias.
